Potato Soup


There are many variations of this soup, but this is how we make it in my family. Cut up some potatoes, and some chopped onion. Cook in a small amount of water until potatoes are tender. If The water has mostly boiled away, just add some milk. If too much water is left in the pot, pour some out before adding milk. Heat to a slight simmer. In a small bowl (or mug), crack a couple of eggs, add salt and flour. Use enough flour to make a sticky dough. Drop by teaspoons into the simmering soup. I like to add a pat of butter and lots of pepper.
This is a good supper for those times when the pantry is rather bare. Potatoes, onion, milk, eggs, flour, et voila!
